Prep Time: 20 Minutes Cook Time: 60 Minutes Yield: 2 loaves
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
2 cups sugar
1 ½ cups oil
1 ½ pints strawberries, chopped (3 cups)
1 cup chopped pecans (optional)
1. In a bowl, combine flour, baking soda, salt, cinnamon, and sugar; mix well.
2. In a separate bowl, mix eggs and oil. Add to dry ingredients. If using nuts, add them now.
3. Fold in strawberries.
4. Pour batter into two greased loaf pans. Bake at 350 for 50-60 minutes.
