Grilled Corn and Tomato Salad
I used what I had on hand, two ears of corn, red onion and cherry tomatoes. I also didn’t use a bell pepper from what I can recall.
Grill corn, turning occasionally, until tenderand charred, about 8-10 minutes. When corn is cool to touch, cut off an end so you have a flat side. Stand corn in a large bowl and slice off kernels.
Add tomato, red onion, vinegar, and oil. Season with salt and pepper. Toss. Best at room temp. Enjoy!!
