Grilled Corn and Tomato Salad

 

Grilled Corn and Tomato Salad adopted from Martha Stewart

I used what I had on hand, two ears of corn, red onion and cherry tomatoes.  I also didn’t use a bell pepper from what I can recall.

  • 2 ears of corn (husks and silk removed)
  • 1-2 handfuls of cherry tomatoes, halved (I used a mix of red and yellow)
  • red onion, chopped
  • 1 to 2 tablespoons red-wine vinegar
  • Coarse salt and ground pepper
  • 1 tablespoon olive oil, plus more for grilling
  •  

    Grill corn, turning occasionally, until tenderand charred, about 8-10 minutes.  When corn is cool to touch, cut off an end so you have a flat side.  Stand corn in a large bowl and slice off kernels. 

    Add tomato, red onion, vinegar, and oil. Season with salt and pepper.  Toss. Best at room temp.  Enjoy!!
