When I was a kid we had two blueberry bushes, which is why I can’t bring myself to buy them unless they are on sale. The same with raspberries. I used to go to the back of the yard by the side stone wall and just sit on the ground and pick and eat raspberries for what seemed like ages. Anyhow… Since we bought the large package of blueberries Harry said he’d make blueberry pancakes for Sunday’s breakfast. You won’t hear me complain. ;)
One of the best things Harry decided that we needed, an electric griddle. Makes making pancakes so much easier! This model doesn’t hold the temperature as well as the one we had pre-fire, but it beats the heck out of using the cast iron skillet.
He used the recipe in the Good Housekeeping cookbook for pancakes and just followed what it said for blueberry pancakes – add one cup of blueberries. Perfect amount if you ask me.
